Meatloaf is Sweetie's favorite comfort food, so I made a special one to welcome her back from her whirlwind Italian vacation. The basic recipe was my mother's classic one:
- 1 lb ground beef
- a medium onion, chopped
- 1/4c bread crumbs
- 1 egg
- 1/4c ketchup
- 1T Worcestershire sauce
- Salt and pepper
Preparation is simple enough. Mix by hand, place in a loaf pan, bake at 350 for an hour and let cool before removing from the pan and slicing.
My mother often would place hard boiled eggs in the loaf, so slicing the cooked loaf would yield a slice of meatloaf with a slice of egg in the center. Very 1950s elegant. One friend of her never could figure out how she got the eggs to turn out so perfectly formed. It never occurred to her to boil the eggs first!
