Sausage and Kale
Italian sausage and kale is a great combination as well as a good candidate for the slow cooker. I chopped a pound of kale into fairly small pieces and put it in the slow cooker with two sausage links cut in small pieces, a medium onion (also chopped), and about a quarter cup of water to get started. I did this in the morning and by dinner it was ready:
You could also make this on the range top in much less time, if you chose. Put a small amount of olive oil in your pot, followed by the sausage, onion, and kale. Stir for a while, add some water (or stock), lower the heat, cover, and cook for 45 minutes or until the kale is tender.
